L’Ultimo Mulino (PN)
In Fiume Veneto, an ancient 17th century mill transformed into a charming relais which maintains intact all the charm of the inns of the past and the good recipes of the Friulian tradition.
Protected by the Superintendency for the historical, artistic and ethno-anthropological heritage of Friuli-Venezia Giulia for its historical importance and beauty, L’Ultimo Mulino is a unique example of a perfectly restored 17th-century water mill.
In love with the place, in the early 1980s, Franca and Carlo Balestrieri transformed it into an enchanting hotel with restaurant, keeping the original structure and decorations intact, such as the stone walls, the wooden and terracotta floors, and the old fireplaces.
We like simple things linked to the land and the traditions of these places which we try to keep alive with our cuisine and our cosy hospitality.
Today, animated by the same spirit and love for the Mill, it is Corinna Balestrieri who welcomes and pampers guests, taking care of every detail with style and kindness.
The arrival at L’Ultimo Mulino is truly spectacular: in the silence of the Pordenone countryside you must cross a stone bridge with three arches scenically placed at the center of the confluence of the water channels that envelop the large stone building and its enchanted garden (magical in spring during the flowering of the rose bushes and wisteria).
The cuisine is very traditional and it varies based on the availability of the raw material, favoring local products and suppliers, such as Sauris ham and dairy cheeses. The menu therefore changes often but never lacks the great local classics such as cjarsons, a typical Friulian stuffed pasta, or tagliatelle with courtyard ragout, pork shank or wild boar morsels to pair with the best Friulian wines.
Even the decorations change with the seasons and guests will always find something new waiting for them: from floral arrangements in spring to memorabilia linked to winter sports in winter, up to suggestive set ups for Christmas or Valentine’s Day. What, however, is never missing here is the warmth of the inns of the past and a fireplace that is always lit. Just like it used to be.
The Secret
A large part of Fiume Veneto is in the resurgence area, a natural phenomenon whereby water emerges from the subsoil giving rise to small lakes. This is one of the secrets of the rich flora that surrounds L’Ultimo Mulino in every season.
