The informal proposal of the world of La Subida Sirk in Cormons is renewed with many works of art, a shop where you can buy the best products of the territory and a deliciously and philosophically "wild" food and wine offer.
Just like nature, from which it draws symbiotic inspiration and sustenance, the world of La Subida Sirk is constantly evolving. Born in the 1980s from an idea by Joško Sirk and his wife Loredana, after taking over his father’s trattoria, La Subida boasts a history of visionary intuitions, a Michelin star that has shone since 2007 for Trattoria al Cacciatore and hospitality made of wonderful little houses in the woods.
Located right in front of the Trattoria and originally opened to offer a simple place to stop and spend time in company, in 2022 the Osteria La Preda was completely redesigned to offer its guests not only a place of refreshment, but also a point of reference for all the products of La Subida as well as suppliers and friends of the large Sirk family.
We thought of a place where you can feel at home at any time of the day and experience the area authentically, with the possibility of taking its extraordinary flavors home with you.
Today at the helm of the nature resort, pursuing the same spirit of proud patronage of the local arts, are their children Tanja and Mitja who, for the creation of the new Osteria, have worked with the architects Leonarda and Adriano Zuppel, historic collaborators of La Subida.
New furnishings and spaces, but above all new ways of staging animals and hunting scenes, one of the distinctive features of La Subida, interpreting its “trophies” with original materials and accents.
Thus, deer and mouflons on the walls become works of art made with Japanese handmade paper and family goblin fabrics, or are “showcased” like the fun wedding banquet created by the artist and costume designer Carlotta Nanut, or translated into romantic wire cages and lanterns handmade by Romano Sirk.
Precious traces of the past remain in the furnishings, such as the many aphorisms that have covered the walls of the tavern since its opening, but also original vintage touches such as the splendid counter discovered in an old abandoned rectory of a Slovenian church.
The spaces are divided so that you can choose the type of experience to savor: under the suggestive outdoor pergola or at the tables in front of the counter for an aperitif or an informal break, or, for a “slower” lunch or dinner, in the mezzanine or in the Carnival Hall, so called because it is furnished with paintings that recall the celebration of this holiday.
Strengthened by the Friulian, Slovenian and German traditions of this rough and generous borderland, the gastronomic offer of Osteria La Preda is orchestrated by the team of chef Alessandro Gavagna of Trattoria al Cacciatore who supervises it, drawing inspiration from local recipes.
From typical appetizers such as Prosciutto D’Osvaldo, a 30-month-old ham smoked tailor-made for the Sirk family, to Frico with a soft center of potatoes and Montasio cheese, from Goulash to Oh My Deer!, the delicious venison fillet with fennel and kiwi.
A menu designed in synergy with the many products, all purchasable, which envelop the guest on display on the restaurant’s shelves.
First of all, those that are born in the world of La Subida, such as the grape vinegar of the Acetaia di Sirk, the only one that starts from whole native Ribolla Gialla grapes to have a product that equals the renowned wines of the area in terms of nobility.
The Osteria is also a wine bar & shop, with a selection of over 150 labels, from Collio and Friuli-Venezia Giulia, and the possibility to order by the glass some gems from Italy and the world personally selected by Mitja Sirk.
The hosts and sommeliers Thomas and Giulia will take you to discover the many specialties, also suggesting how to taste them. Like starting, for example, with the Subida Sour drink, an aperitif based on Amaro Seri Pervas, Acetyco vinegar drink and, obviously, a splash of Sirk vinegar!
As soon as it opened, the Osteria was also an ice cream shop, an origin that is now honored on the menu with fresh vanilla ice cream served with berry syrup.
